Oranges (Seville)

These medium-sized, bitter oranges are best known as the star ingredient in orange marmalade, but they are also excellent for juicing, cocktails, marinades, vinaigrettes, sauces, and as a swap for lemons and limes in citrus-forward desserts. Seville oranges are intensely aromatic and tangy, with dimpled yellow-orange skin and thick pith, making them an ideal citrus for candying.
